We are finished when the bacon looks a little crispy, removing bacon and onion from pan - leave bacon grease in the pan for later. Boil potatoes until they are fork tender, upon which we remove, drain and cool in cold water. Flatten potatoes with a towel and the palm of hand - make it look like a fat pancake - don't smash too thin. Crisp the smashed potatoes in the bacon grease. <br /><br />Grill/roast red bell pepper, and then dice it. Add pepper to the crisped potatoes with sour cream. Option: spice it up! First day I <br>tooled around town. Next day went on the local bus over to <br>Borobudur, which is a fantastic Buddhist temple. Unesco site. <br>Really cool. Then the next day I rented a moto-bike and drove out to <br>Parmbanan. This one is a whole complex of Hindu and a few Buddhist <br>temples. I liked this one a lot more. Unfortunately, it got hit <br>pretty hard by a 6.9 quake last year so you can't get too close to them.<p>Anyway, see the pix below. My toenails were getting long, so I had to get a pedicure, and it was the best $3 pedicure I've ever had :) An hour of massage at a spa goes for $5, and on the beach just a bit cheaper. The rain finally stopped around 6pm after raining alllllll day. I suppose its poetic justice that I see about 4 days of rain a year at home, and then get it in spades on vacation. It isn't all bad - it really slows things down and gives you a chance to catchup and relax. Not that I wasn't relaxing before!</p><p class="mobile-photo">So I finally bought a ticket outta here tomorrow. I've been trying to leave Kuta for 5 days or so....! Off to Yogyakarta to visit the ruins of Borobudur. Just a quick 3-day "hey lets check out Java" trip, and then off to the famed (or not so famed?) Gili Islands, where there are no cars, just lots of sand, and a cute bungalow right on the beach. This was the third time, and it was supposed to be the charm.<br /></p><p class="mobile-photo">As I sat there reminding myself that it could be worse, the news of the terrible fires in North San Diego started rolling in. As I went to bed at midnight, it was apparent that the first thing I needed to do in the morning was see if I would be going to work or not.</p><p class="mobile-photo">"Ground Zero" of the fires is the Rancho Bernardo area. It is located about 25 miles north of downtown San Diego, and 25 miles from where I live in Mission Beach.<br /></p><p class="mobile-photo"><a href="http://maps.google.com/maps?q=16399+W+Bernardo+Dr,+San+Diego,+CA+92127,+USA&sa=X&oi=map&ct=title">Click here for a link of where my office is relative to San Diego</a></p><p class="mobile-photo">The radio said that I-15 was closed about 10 miles south of my office in Rancho Bernardo. We call Rancho Bernado the "RB". Its a quiet little suburb that some people call the Old Folks Home because so many elderly people live up there. HP also has a 3000 person campus there, along with other companies like Sony.<br /></p>So the fires started near Ramona. I know a few people that live in Ramona that I work with. The fire spread west to Poway, where a lot of people at work live. Then this morning I hear that they are evacuating Rancho Bernardo. I figure about half the people where I work live with 10 miles of work, and they are all evacuated. I haven't talked to all of them of course, but I already know two people that have had their houses burned down.<br /><br />I began looking at the addresses of the houses that have been burnt, and they are about 1/2 mile from my office, to the north. I have two co-workers that have houses just to the east of the area that has all the burned down houses.....I fear the worst, as the wind blows east-to-west, and likely came from where they live. I wish them the best.<br /><br />I took a hike up a local mountain to try and see the fires at sunset. This is the direction of the fire. You can see it is even smokier than towards the ocean. Up on the top of the mountain at 800ft, there is a pretty steady westward breeze. It isn't anywhere near the 70mph gusts that I see in RB. Its a really nice warm breeze too, hot dry air from the desert. I never was able to see any of the fire - the smoke is too thick, its nearly 15 miles away, and I think the fire is behind a mountain. What is most amazing is the I-5 freeway below. This picture is at 5.30pm, and usually you'd see bumper-to-bumper traffic going south. Instead, none. Going North, the highway is nearly bare. I am surrounded on two sides by water, so I don't imagine there is any chance there will be fire by me. This time.<br /><br />We had similar fires exactly four years ago to the week. People knew these were coming. The Santa Anna winds blow massive warm wind in from the desert. Gusts up to 70mph. I saw the palm trees up in RB on TV, and they were blowing like a hurricane was coming through. The wind blows the glowing embers of the fire into the air. The gusts last about 30 seconds, but at 70mph, it can blow the embers half a mile in that time....blowing them right over the 10 lane I-15 freeway! Amazing.<br /><br />I wonder how many people I work with will lose their houses. One of my friends speculated that if our site burns down, it would be cheaper to move everyone to our other sites (some of which are half empty due to overseas outsourcing) than to rebuild. Lets hope that doesn't happen.<br /><br />Work is obviously closed. I received an email that it will be closed again tomorrow. I usually receive about 100 emails per day, but with the entire site closed, and no doubt the rest of our division (in Oregon, Idaho, and Virginia) in a bit of shell-shock, I received maybe 10 emails.<br /><br />The world here in San Diego has just stopped. Stores even 30 miles south of the fire are closing early. They are asking us not to drive anywhere so the freeways are free for emergency crew traffic. It is a similar feel to when a huge massive snowstorm rolls through, except houses are being destroyed and people are fighting hard to save what they can.<br /><br />....and me? Down here on the beach, its 80 and sunny all day. Surf is up with great waves because of the off-shore wind. I'm lucky. I'm safe and have a roof over my head.<br /><br />Meanwhile, 10000 people are starting to mass at the Charger's Stadium. Evacuees they call them, but refugees might be a better word. <br /><br />This is our New Orleans. 250,000 people out of their homes. Will Southern California be the second USA victim of Global Warming? I'd recently stepped up to a Weber Performer Grill. My upstairs neighbor was afraid I was going to "burn the place down," with my charcoal grill. I suppose anything is possible, but seeing as the tree and deck get watered daily, it'd be a tough thing to start it on fire. But I guess flames shooting out of the chimney starter can scare people who can be scared.</span></span></p><p style="text-align: left;" class="mobile-photo"><span style="font-size:100%;">Anyway, I'd had this great pizza when I was out in New Haven, CT at a place called <a href="http://www.pepespizzeria.com/">Pepe</a>'s and then again at a place here in town called Basic Pizza downtown. It has super thin crust, "brick oven style," so I started looking into it. I knew it took lots of heat. And lately I've been using this hardwood charcoal that is just packed with so much heat I can barely cook on it!<br /></span></p><p style="text-align: left;" class="mobile-photo">So I came across this <a href="http://slice.seriouseats.com/jvpizza/">guy who is just amazing.</a> He's trying his hardest to duplicate this Brick Oven style pizza, and has done just insane tests. Basically, your home oven only goes to 450, but in the self cleaning mode, it gets higher, so he messed with his oven so he can run it at the self-cleaning mode! "Its not dangerous," he says....</p>So with all that in mind, I caught the bug, and sure enough, the next night on the way home begins my Brick Oven Pizza Grill Night.<br /><p style="text-align: left;" class="mobile-photo">..</p><br />I stopped at Home Depot to buy a pizza stone. Actually it started at lunch when I saw a Tile Store next to my favorite <a href="http://www.phohoacaliexpress.com/index.asp">Pho-reia. <span style="font-size:85%;"><span style="font-weight: bold;"></span></span></a><p style="text-align: left;" class="mobile-photo"><a href="http://www.phohoacaliexpress.com/index.asp"> </a></p>The tile on show is pretty nice, and the place looks like a showroom for people remodeling their upscale kitchens. I ask the lady for some unglazed quarry tiles (ie, cheap pizza stone) and she kinda laughs, and says, "Why don't you just get yourself one from Pampered Chef?" Well, who-hooo! I ain't buying nothing from someplace using the word Pampered. Why isn't that a <a href="http://www.pampers.com/">diaper</a>?<br /><br />So that night I'm at the Depot. Funny all the nicknames people have, like the Home Despot.<br /><br />Anyway, they didn't have quite what I was looking for but I got two unglazed quarry tiles...reading that these things sometimes break, and that they were like $1 each. Lots cheaper than the $30 pampered chef variety (which break too!)<br /><br />A not so quick trip to Albertsons (fast becoming my least favorite grocery store). Somehow they hit me with a .75 CRV and nothing I bought had CRV w/it. I suspect the cashier rung something up, then gets to keep the change. Got my money back, but will never figure out what happened.<br /><br />Got home, fired up the grill, and started rockin' and rollin! Yup, I pulled off the pizza and then started scraping the tile, and is cracked. This happens I guess. No big deal, cuz I bought two tiles. I did kinda wash the tile with water before I put it on....wonder if thats why it cracked...but it was on there for at least an hour before it cracked. Actually the temp isn't too hot. The crust cooks way faster than the rest of the pizza. Apparently I need to put some tiles or some insulation in the roof of the grill, or put another stone above the bottom stone. Opening the grill releases too much heat and the body doesn't store it. It was really a good one! </p><p>The owners live upstairs and can't handle the fun and smoke and dust from a charcoal grill. Finally, after we decided not to move out, they forced my hand and sent me a note saying I have to get rid of the charcoal grill. So that meant we needed to have one last suaree.</p><p>Anyway, I'll be moving out as soon as I find a new place, as I need to grill. Unfortunately, it looks like my roomies aren't interested in moving. </p><p>Ah yes, the BBQ! Steaks! About as many as I've ever done. 9 to be exact. 3 NY Strips from Henry's, and one 16oz ribeye that looked as good as any I've ever seen, and 3 more NY strips, and then two more NY strips. I got the fire going, then choked it. By the time I was ready to cook, it had gone cold, so I stoked it, and it figures that only by the time the steaks were done did the fire really get rolling. Alas!</p><p>Juli made a really tasty slaw that didn't last. We both bought green cabbage 'round St. Paddy's day....suckers for green things are we both. </p><p>Wine was flowing, courtesy of Charles Shaw, his $2 bottles a bit hit with the crew. Chaewon brought over two Korean friends who were dancing in the living room, and it was quite the little party for a usually quiet Wednesday evening! It was even better with a glass of the Cameron Hughes Meritage wine that Juli bought at Costco. Recommended! Probably the best bottle of wine we've opened in our house.<br /><br />So I love a good cajun pasta recipe. I've been poking away at one for awhile, but it seems I always just end up ordering it at a restaurant and being disappointed. Most recently I had the jambalaya at rock Bottom that was really good! <br /><br />So it motivated me to give it another go....but jambalaya is riced based, this time, pasta!<br /><br />Ok, so here's the scoop<br /><br />2 andouille sausages pre-cooked (I think they all are, but I'm no expert)<br />Big onion<br />half head garlic<br />can tomatoes<br />can chipotle peppers in adobo sauce (small one)<br />penne pasta<br />celery<br />ground oregano, sage, thyme, fennel. <br />Worchestershire sauce<br />half a big can of olives, sliced.<br /><br /><br />--<br /><br />Chop and sautee the onions and garlic in olive oil<br />Chop the sausage into thin half coins. Think = pinky width<br />Dice up the celery leaves from 2 stalks.<br />Toss sausage and diced leaves into the sautee<br />Toss in a bit of sage, oregano, a bit more thyme, a bit more cumin, and a bunch of fennel (all to taste of course)<br />Probably add a bit more oil at this point to get the spices all nice and mingled and juicy<br />Get this thing going for awhile till the sausage starts getting a bit crispy on the edges<br /><br /><br />--<br /><br />Meanwhile, boil up your water and make the penne to be ready for the meal<br /><br />--<br /><br />Meanwhile, crack open the can of tomatoes. Crack open the chipotle peppers<br />Toss the whole tomato can and half the chipotle can into a food processor<br /><br />(side note: I used half a can and thought it could have been a bit spicier, but it was pretty spicy and it had good balance, so up to you what to do there)<br /><br />blend up a bit. Don't puree it, I like a little texture<br /><br />--<br /><br />Ok, so once the sautee is kickin, add the tomato sauce. Toss in the olives and the 2 chopped up celery sticks. <br /><br />Cook till the the celery is al dente. I haven't tried it yet cuz its too hot. <br /><br />Anyway:<br /><br />2 - boca italian sausages, lightly burned<br />2" of gingerroot, diced<br />1/4 head of garlic<br />small onion<br />One jar Muir Glenn organic cabernet pasta sauce. I always get all these different varieties of pasta sauce so I'm trying to keep track of which ones are good. <br />one big zuchinni<br />6 springs of asparagus<br />can of black olives<br /><br />diced the onion, ginger, and garlic. Sauteed for 8 mins in what turned out to be too much olive oil. Pulls flavor out of the spices. The recipe called for pureeing the sauce when done, might have added flavor but too much work<br /><br />Tossed the pasta sauce on top, then tossed in the veggies<br />quick browned the sausage, coined them, and tossed in the mix<br />Added the sliced olives<br />cook till zuch's were tender<br />had some whole wheat organic pasta, cooked al dente, which actually turned out to be al dente. I kinda like my noodles over dente, but I'm trying to be authentic. Fettuchini.<br /><br />Anyway, I think I used too much oil cuz it didn't totally mix up with the sauce, and spitted off the pan. <br /><br />I can taste the ginger but I'm not overly impressed with it....although it is tasty, it doesn't seem like it added a whole lot. I can taste. Perhaps some pickled ginger, or maybe I should have beat it up in my new mortar which i don't use enough...<br /><br />Oh yeah I tossed some dried chili's in it, and it didn't seem to add any spice.<br /><br />All in all, tasty, and maybe I'd try it again to make it more gingery which I think would work really well. I like a nice glass of wine with dinner, or even without. Problem is, I am too cheap to pop a whole bottle of wine for myself - inevitably I wont' finish it. So that has left me in the past drinking the $2 Charles Wilson wine, better known in these parts as Two Buck Chuck. It isn't half bad, and better than the price indicates. So then I wondered if these box wines are better. The nice thing about a box, is that once you open it, you have a month to polish it off. So a glass here, a glass there, and eventually you'll get thru the 3L (4 bottles) of wine. But it has a bad rap. Lets stop that. I have had it, and it can be very good. I found some recommendations, and apparently, most of the 3L boxes are pretty good stuff. The price is right, since they save so much on the bottles and shipping. So pick one up and try it out. This cut is very specific to the success of the flavor)<br />1/2 white onion in julienne cut<br />1/2 bunch of cilantro chopped<br />2 Jalapeños<br />1 Tomato julienne cut<br />Sesame Oil<br />Kikoman Teriyaki Sauce and Marinade<br />Fresh Ground Pepper (ground thick)<br />Thai Kitchen Stir Fry Rice Noodles<br /><br />Directions:</em></p> <p><em>Cut meat into thin strips<br />Sautee meat on low-med heat for a few minutes until brown. Drain at least half of the meat juice.<br />Add in onion, chopped cilantro and jalapeños - Sautee a little longer<br />Next add in 2 Tbsp (approx) of sesame oil (Since this has strong taste be careful)<br />Lastly add in Teriyaki sauce (approx 1/3 cup)</em></p> <p><em>On a separate pot boil water for the noodles. Add a little bit of salt to the water.<br />When the water begins to boil add in the noodles.
